Ruhlmann's book proportions inspired me to make potato cakes. However, I made this method somewhat vegetarian (easy to find online) by replacing half of the eggs with an alternative mixture of plain homemade chia seed eggs. This recipe will make about 9 fairly thick potato tortillas (as pictured above) or about 14 thin tortillas. If you prefer a crispy crust, it's best to make them thinner (I'll do this when I cook more of them). When ready, place the extra potato tortillas in the fridge and bake the next day.
