Instructions for making potatoes and cornmeal
- Peel all the potatoes and cut them into slices. (about 1 inch).
- Peel the corn and clean it well. Remove all bad spots. In a large bowl, scoop out the seeds with a knife. Then take a spoon and scoop out the 'milk', all the seeds and water from the pot. I placed stones and sprinkled the edges as a decoration.
- The pork is browned in a Dutch oven. Pour 1/4 of the oil into the pot and let it rest. Place the ham on a paper towel to soak up the butter and use as a dip for the ultimate result.
- Melt the butter in a bowl. Add onion and celery. Add some salt and pepper. Fry for a few minutes till the onion becomes transparent and release the spices. You can smell it when it happens.
- Add carrots, garlic and remaining spices (except chicken stock). Cook for 2 minutes.
- Add the potatoes and corn to the pot. Fill with water about 1 inch above the ingredients. Cover and remove to enjoy. Add the cream and chicken broth and stir. Reduce heat and simmer for 30 minutes or until potatoes are tender.
- To thicken the sauce, use an immersion blender or a hand-held potato masher and mash 1/3 of the potatoes. If you want it thicker, you can mix 2 teaspoons of cornstarch with a little cold water and add it to the pot. Let it cook for another 10 minutes and serve.
- I garnish mine with fresh corn, parmesan cheese and boca beets.
