- 2 eggs, lightly beaten
- 1 teaspoon of vanilla
- 1 container (5-6 oz.) vanilla Greek yogurt

- Preheat the oven to 400 F. Wash the potatoes and prick them several times with a fork. Bake on a baking sheet for 40 minutes.
