Instructions for cooking sweet potatoes - potato curry

  1. Potatoes cut into cubes (peel if desired)
  2. Cook until done - usually starting with 10 minutes of boiling brine
  3. While the potatoes are cooking, cook:
  4. Finely chop the garlic and turmeric or use a blender if available (at 10 tmx for 5 seconds)
  5. Finely chop the onion (at 5.5 tmx for 5 seconds)

  7. When cooking in a pan / container:
  8. Heat the oil, fry the onion until it turns yellow and translucent, then add the garlic to the aroma.
  9. Add turmeric
  10. Add seasoning
  11. Add tomatoes
  12. Cook until soft, about half an hour, over medium and high heat
  13. Using tmx: set the speed of Varoma 1 to 20-30 minutes
  14. Add the potted tomato ingredients as a last resort
  15. Mix the potatoes (or sweet potatoes) with the pasta in a large saucepan
  16. Add coconut milk
  17. Cook over medium heat for 20 minutes with the lid open
  18. Add the peas, cover and simmer for 5 minutes
  19. Add the date syrup and mix well
  20. Serve with chopped cilantro or Thai basil
